If you sit a pineapple in the sun will it ripen like tomato's do?
Good question..unfortunately I don't know the answer. But I do know a Filipino chef that swears by storing the pineapple on the counter (inverted-leaves side down) for a few days. He said the sugar redistributes and all of the pineapple fruit is even sweeter. Never tried it but it's worth a shot.
I know my mother (who grew up in the grocery business) taught me her method of prep...she removes the outer layer completely. Then, she slices it up in to wheels and proceeds to soak the pineapple for a day in slightly salty water. This helps to counter balance the tart/acidic nature. To this day, I still sprinkle a little salt on it when I eat it fresh. Ironically, salt has the nature of bringing out the sweetness in foods. I do this to watermelon too.
