What does Chamomile Tincture taste like?
Made some not sure if it came out right, taste a bit bitter and flowery.
Also, what can I do with extra? Any way to make a salve or perfume out of it, or anything?
Your bitterness is likely from the calyx of the flower. If you made it from primarily just the flowers, the calyx should be peeled off next time. Dandelion wine is the same way.
If you used the whole plant, the taste is likely about right. If you compare to chammomille tea that has steeped much longer than usual, you should taste similar flavor notes.
Which alcohol you used will also affect the results. If it was a super cheap vodka- that will add some off flavors. Most of the super cheap ones tend to have a slightly yeasty flavor to them which you only can taste drinking it straight. If you used a mid range or premium brand, they likely did not contribute any off flavors.
While I am not promoting one brand over another, nor trying to promote unwise use of such products, the price point where the taste quality is clean enough for tinctures would be Smirnoff. Otherwise go for the imported brands, which often end up at a higher price point, but usually have as good of flavor. If you sample it at a half teaspoon or thereabouts, you should have enough that you can taste and smell the subtle differences between a few brands. Yes, you can practice the wine snobbery to get the full flavor and smells as well. You can use the rejected brands for baking. They will help your pie crusts.
Usually what happens is the alcohol draws out some of the bitter oils that water would not. You could try putting the next batch in the freezer, the essential oils will still mix with the alcohol, and the bitter oils should be less noticed.
