Olive oil based caesar dressing?
So I have searched the web for olive oil based caesar dressing and the recipes that were available sucked. Anyway I found a company that sells it but they don't ship to my area and don't have any stores selling it around my area. They have an ingrediants list but I have no idea in what amounts. The ingrediants are
-Extra Virgin Olive Oil
-Expeller-Pressed Olive Oil
-Parmesan Cheese
-Lemon Juice from Concentrate
-Anchovy
-Fresh Garlic
-Red Wine Vinegar
-Dijon Mustard
-Black Pepper
anyone have any ideas?
It's usually about 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 clove of garlic rubbed into a wooden bowl, or I guess u could mince it up really fine, 1 to 2 anchovies smushed up into a paste, a tablespoon of dijon mustard, parmesan cheese, about 1/4 of a cup or less, and as for the lemon juice I would use REAL lemon juice from a real lemon, probably about a half a lemon, not concentrate and salt and pepper to taste, then whisk it till it's emusified. Traditionally you do all this in a wooden bowl then add your romaine lettuce leaves and toss....You don't need the expeller pressed olive oil, just the EVOO.
