What herb/spice combinations to use for flavored oils?
I'd like to make some flavored oils to give as gifts, but I'm not sure what combinations of herbs, spices, etc. to use for flavoring. Most of my friends and family probably wouldn't like anything spicy. And in my herb garden right now I have mint, parsley, thyme, green onion, chives, rosemary, sage, and basil, but of course I could buy more ingredients if necessary.
Oops, I forgot, I have dill as well. 
To those of you concerned about health issues, yes, I do plan to dry the herbs or whatever I add to the oil, cook the oil, sterilize the bottles, and provide instructions about proper storage and use.
I would use parsley and sage, then a basil, rosemary and thyme. Green onion and chives...and mint with rosemary. Of course I would just smell the blends together first and see if it is apealing and then use them. Good luck.
